sometimes it's too easy

The headline writers do the columnists' job for them sometimes, don't they. I haven't even read the thing and I can already answer the question. It happens to be today's Miss Manners: "Am I Too Nice to Waitstaff?"

Gentle Reader: No.

The thing is, there absolutely are people who are air-quotes nice air-quotes to waitstaff, and those people are terrible. They treat the staff as a service worker but also expect them to act as if the customer is their friend. Come on, honey, have a seat, tell me all about your boyfriend. or whatever.

That is obviously not what this Gentle Reader is discussing.

Yeah, if this was an AITA, there's at least a 50% chance "being too nice" means "blatant sexual harassment"

....but that is not the case here.

Just read that one and what LW's mother is characterizing as "too nice" is the common decency of recognizing the essential humanity of the waitstaff with whom they are interacting. Like, good grief. LW's mother must be awfully pleasant to hang out with, if that's what she thinks about interacting with staff.

Yes, the only time someone is being "too nice" to wait staff is if a food comes out badly wrong

eg steak is frozen/meat is so undercooked as to be a genuine health hazard;

allergen that they clearly asked not to be present is present;

bacon is present for someone who avoids bacon for religious reasons and who clearly asked for no bacon

and the customer doesn't speak up for fear offending the waitstaff or hurting their feelings or getting them in trouble.
