I worked with a fully greyscale-colorblind cake decorator! She occasionally had color-sighted co-workers confirm whether a pastel was visible as a color (the difference between palest grey and white is extremely subtle, the difference between pale pink and white is not that subtle), all the frosting buckets and their lids were labeled, occasionally a color-sighted person would confirm that the labels corresponded to the contents, and I made her a tints color wheel marking the cardinal CMYK colors and the position of our frosting dyes.
Her color combinations on cakes were always really popular. She'd put together things that she thought sounded fun, and they disappeared faster than the conventional ones.
The most difficult challenge we had was figuring out how to duplicate Eeyore in frosting, but it came out really well!
